I had to work today, so we didn't have any fun plans for Chris' day off. When we have no plans and I have nothing better to do, I bake. Today's little number: cookies and cream cupcakes. (oh yeah, and it's Valerie's birthday, so these are in honor of her)
I make a classic white cake cupcake and stuff it with milk chocolate pastry cream. When you stuff a cupcake it needs to be refrigerated, which can sometimes dry out your cake, so to combat that, I dip them in ganache which holds in the cake's moisture and makes the cupcake prettier.
Then I whipped up a bowl of vanilla bean Italian buttercream, which is a egg white frosting so it's light and fluffy. I folded in some crushed up Oreo into the frosting and piped it on top of the ganache.
Topped off with some of the leftover pastry cream and an Oreo, these are fantastical!
